the kids and i just made some sweet little gifts for the neighbors – super easy, super cheap, and super yummy. i got some cute popcorn buckets from the dollar bin at target, then filled them with a paper bag of homemade caramel corn. throw on a jaunty ribbon, and voila! now that’s my kind of holiday!
about 8-10 cups popped popcorn (i just made it like this)
1 cup brown sugar
1/2 cup corn syrup or 1/4 honey (i used the honey and it came out perfect)
1 stick butter
pinch of salt
1/2 teaspoon baking soda
1 teaspoon vanilla
preheat oven to 250
line 2 baking sheets with greased foil, and spread popcorn over them
heat the brown sugar, honey, butter, and salt together till boiling. boil 2 minutes, stirring the whole time. take off the heat and stir in the vanilla and baking soda (the baking soda will bubble up a bit – don’t be scared!)
pour caramel mixture over popcorn, stirring to coat
bake in oven 10 minutes, stir popcorn around, then bake 10 more minutes
let cool a minute or two (i just dumped the popcorn onto a new piece of foil on the counter), and enjoy!
