bunsen burner, nice little earner

this weekend our 2 fave cats, mikey and coco, came round. 2 things that are always a guarantee with them are laughing our skirts off and munching on super delish food.

on saturday night, pants fired up the grill with some awesome teriyaki-marinated chicken. we served it with rice, salad, fruit, and carmelized onions and mushrooms.

for dessert, homemade baked apples over ice cream. yum.and then about an hour later, mikey and i made teriyaki chicken burritos with all the leftovers. and added sour cream. and cheese. and more teriyaki sauce. i know, i know.

but it was so worth it.

saturday morning we lounged around and ate sausage with mustard and not-so-pretty pancakes. of course, i forgot that we were running low on syrup, so i had to improvise.

hence, my last-minute strawberry topping was born.

last-minute strawberry topping
2 cups frozen strawberries
1 – 1 1/2 cups sweetener (i used a mix of aguave nectar and sugar)
1 – 1 1/2 cups water
splash of vanilla

boil all ingredients on stovetop till syrup becomes thick. mash strawberries a few times with a potato masher, and serve over pancakes. then go run a bunch of miles cuz you ate so much over the weekend.
