so i was craving something satisfying, but also easy. and what’s easier than baked potatoes topped with a yummy broccoli cheese sauce? but we’re not just talking any old cheese sauce…we’re talking the most super delicious heaven-sent mouthwatering i-can’t-believe-i’m-eating-something-this-good cheese sauce.
i got the original recipe from cooks.com, and tweaked it a bit. it is sooo easy and has just a few ingredients.
i-can’t-believe-it cheese sauce
first, bake some potatoes. i just throw them in the oven (poked and unfoiled) at 400 degrees for about an hour or so (till they are soft).
for the sauce, put a cute little pot on the stovetop, and melt together over medium heat:
4 tablespoons butter
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese
1/2 cup shredded colby jack cheese
1 head broccoli (finely chopped)
slice your baked potatoes in half, and as soon as the sauce melts together, generously ladle it on top.
sometimes you just need a little comfort food!
